Blender Pancakes

These pancakes are light and yummy. With the apple, wheat flour, flax, and honey (rather than sugar) they are super healthy too. They are almost like healthy crepes.

Megan's Blender Pancakes*
2 c. water
2 eggs (or flax substitute)
2 Tbsp. oil (or flax substitute)
1 tsp. salt
2 Tbsp. honey or sugar
1 apple
~2 c. flour (mix in wheat if you'd like)
1 Tbsp. baking powder

We have a Vitamix so we just blend everything together for a few seconds. (The recipe says to mix all ingredients in the blender on speed one, except for the last two. Then add enough flour until the batter is the right consistency. Then add the baking powder last and mix enough just to mix through). Cook on a hot griddle (350-400 degrees). Serve with homemade syrup or fruit topping (puree a bottle of canned peaches, with juice, in the blender, etc.)

Our whole family loves them.

That looks good. So you blend *everything* in the blender so you can just pour it onto the griddle. That's nice. I like the idea of pureeing the canned peaches, I'll have to try that.
So jealous you have a vitamix.

We love our vitamix so much. I can't imagine life without it now. Even our 10-month old drinks our strawberry/flax/spinach smoothies. It's so great.
